Love Difference cooking: comparing cultural identities in the kitchen. Recipes from cafeteria in Cittadellarte, by Francesco
It sounds weird, but it does exist a precolumbian cooking: the feeling in reading the recipes is that of looking for information on Aztec horse-riding…. Recipes are virtually inexistent, reconstructed going backwards, coming out from contaminations. It seems that Aztecs made use in cooking of only turkey and some other birds, fishes, chilli, local herbs, and cocoa. Spanish took all the rest, until beer and wine got the place of the popular chocolate.
It is possible have a try with Opaca de camarones, Peruvian potatoes with walnuts and shrimps sauce, a light dish with a vegetarian version (boiled eggs instead of the shrimps), or with the Maya Pastiche with chicken and pork. We will talk about the recipe next time: the point is cooking, having your guests in mind: dedicating to them not only the time of a dinner, but the main course, as a sign of respect and homage of their Country. The staff at the Cafeteria will dedicate the Maya Pastiche – Love Difference Kitchen Thursday – to a couple of friends: a man from Colombia, a woman from Emilia, and their two kids, Anis and Enea.
