Love Difference cooking:
comparing cultural identities in the kitchen. Recipes from cafeteria
in Cittadellarte, by Francesco
Let’s go back to precolumbian cooking, to Opaca de Camarones,
that is Peruvian potatoes with walnut and shrimps sauce: a good all-in-one
dish for a light meal, getting fully vegetarian by using boiled eggs
instead of the shrimps. For 4 people, use 4 medium-size potatoes,
60 ml. olive or peanut oil, 1 sliced onion, 2 chopped garlic cloves,
3 dried chilly peppers, 50 gr. finely chopped walnut, 50 gr. cheese
(not creamy), 200 gr. shrimps, half a pint of milk.
Cook the potatoes in steam, and keep them; brown onion and garlic
in oil, add all the other ingredients and get off the fire. Put everything
in the liquidizer, adding the milk to get it smooth. Cover the potatoes
with the sauce. Tell the story of this plate (see LDN
#13), using your fantasy.
