Love Difference cooking: comparing cultural identities in the kitchen. Recipes from cafeteria in Cittadellarte, by Francesco Egg Risotto. Astonishingly simple recipe from Italian countries of rice: Novara, Pavia, Vercelli. Cooking suggestions for six: brown some onion in butter, add the rice (60 gr. per person) and cook for two minutes. Add chicken or vegetable broth (one cup every time, until the rice is done, approximately 15 minutes). Add salt if necessary, then add three yolks and stir well. Serve hot, with grated parmesan cheese. Literary variant: grated white truffle. After the risotto, serve a stuffed cabbage: recipe on LDN#9.
